A quart jar of whole or halved tomatoes requires about 3 pounds of fresh tomatoes. For tomato sauce, a quart jar requires 5–6 pounds of fresh tomatoes because the sauce is cooked down. Tomato paste takes 12–15 pounds of tomatoes per quart.
Yes — green beans are a low-acid food and must be pressure canned for safety. Water bath canning green beans is not safe and can result in botulism. The only exception is pickled green beans (dilly beans) with sufficient vinegar, which can be water-bathed.
The USDA recommends using home-canned goods within 12–18 months for best quality, though properly sealed jars remain safe for much longer. After 2 years, nutritional value and texture decline but properly sealed jars are generally still safe if the lid hasn't popped.
